Normally in summer we forget about routines, we skip all type of healthy and balance diets.  When September starts, we have good resolutions for this new year to come, sometimes setting our goals to high.

The variables of the pyramid are the following:
- Take any type of fruit and vegetables

- Drink a lot of water
- Eat local
- Eat dried fruits
- Use organic oil
- Daily wholewheat cereal consumption

If we take a look in the products that we should eat daily, we see that organic oil is named as a fundamental element in a healthy diet.  The constant consumption of this product is very important for a good functioning of our body (it can be compared as a body degreaser).

Interview with Josep Safont: Managing Director of Dama de Elaia

What´s an ecological product for you?
An ecological product is the one that`s manufactured since the beginning in a totally natural process; of course, following all the national and international regulations for these type of products.
Why did you enter in this project?
The reason of creating a company that could accomplish all the objectives of “ecological products”, was considering all the benefits that  the final product could provide specially in the consumer`s health; and  that  it´s also respectful with the environment, giving prominence to the ground and to the field.
Please explain to us, what should a good organic olive oil have?
Good organic oil starts in the olive´s harvest; a carefully controlled flowering, it´s curdling, it´s healthiness, and the optimum timing for its ripening.
It´s very important to have the adequate systems for it recollection, transport and a mill capable of applying the desired conditions for the elaboration of every variety of oils, following all the established regulations; doing a very delicate selection of the organoleptic of each batch of oil produced.
At the same time, its important to recall the sustainability of our procedures, by using the residue and wastes to produce subproducts; like the orujo two phases, the water used to wash the olives and some oils used to moisturize and treat the grove. This are ways to prevent environmental problems and to respect the ground.
How is the organic oil beneficial?
The principal benefit of the organic oil is of not having any residue of the fertilization programs with synthetical products or phytosanitary treatments, and the pleasure of detecting diverse sensorial sensations that high quality ecological oils possess, when using it in some food preparations, with the ideal and suitable pairing of tastes in terms of its variety.
It also influences in cardiovascular improvement in the consumers; slows the aging process; diminishes problems in hypertension, and the incidence of some types of cancer.

Spring Salad, Abarem The ecological olive oil

 

Ingredients:

  • 500 g. of tomatoes
  • 500 g. of potatoes
  • 400 g. of green beans
  • 150 g. of green peas
  • 1 onion
  • 1 carrot
  • 1 garlic clove

Complementary ingredients:

Preparation:

  1. Peel and chop the onion and the carrot.
    Clean and cut the tomatoes.
    Remove ends from green beans and their herbs. Then clean and chop it.
    And finally peel and mince the garlic.
  2. Boil the potatoes with skin. Then let them cool, clean and cut them. Meanwhile, pan fry the green peas and the green beans and then drain them.
  3. Put everything inside a salad bowl and add aromatic herbs, salt and Abarem the Ecological oil
  4. Serve very cold.

SALAD ANCHOVIES IN VINEGAR AND CHEESE IDYLLIC, ABAREM THE ECOLOGICAL OLIVE OIL.

Ingredients:

  • 24 anchovies in vinegar
  • 200 gr. mixed lettuce
  • 2 pieces of garlic
  • Fresh prasley
  • 100 gr. of idyllic cheese
  • Abarem ecological olive oil
  • Apple cider vinegar
  • Salt

Preparation:

  • Cut the pieces of garlic and fry it in a frying pan with a little bit of Abarem ecological olive oil until they are a little bit toasted. Remove from burner and add a handful of chopped parsley. Keep it.
  • Cut the cheese in very thin pieces, nearly transparent. Use a wide a very sharp knife.
  • Put the lettuces in a dish. Add the anchovies in vinegar, which will have been inside the fridge until the last moment.
  • Spray the fried garlic on the anchovies in vinegar. What is more, put the pieces of cheese on the lettuce and the anchovies.

Abarem, the ecological olive oil

When the summer starts we all like to taste new cold dishes that delights our palate with an exclusive freshness.

Dama de Elaia launches some different proposals in order that your dishes can become funnier, more natural, and completely Mediterranean. If you are about to organize a dinner with your friends, family, partner…, then we have to advise you to cook with our special olive oil. Thanks to our oil your dishes will have more personality, and you can cook it easily, quickly and it will become delicious!

This week we are going to talk about Abarem’s oil. It fits perfectly with any kind of salad because of his herbaceous flavor. Furthermore, it is also perfect as an essential ingredient of some sauces, like mayonnaise, Biscayan, or pil-pil (typical Basque sauces); among others.

Wellness salad: for those days when you arrive home tired after work

Ingredients

· Lettuce

· 1 lemon

· Half onion

· 3 basil leaves

· 1 mint branch

· 1 apple, cunt into slices

· 1 clove of garlic

· Abarem olive oil

Preparation:

Clean the vegetables. Cut the onion, the apple and mix it with the lettuce. Add the Abarem’s oil, the 3 basil leaves, 1 clove of garlic –also cut-, and, finally, the lemon squeezed.

That dish is perfect when we are exhausted, it helps the digestive and nervous system. It is a traditional remedy to fight against the insomnia, and sleep peacefully in order to go to work in a good mood.

Rainbow salad

Ingredients

· 1 cucumber with the skin on

· 1 lemon

· 1 carrot

· 1 apple with the skin on

· A piece of beetroot

· Abarem olive oil

Preparation

Cut the cucumber into fine slices with the skin on. Put those slices into the same leaves. Grate the carrot and the beetroot into fine slices. Dress it with the lemon and the Abarem’s oil; if you want, you can add a little bit of mayonnaise.

Spanish Chefs visit the mill for making Olive Oil

 We had the great pleasure to receive the visit from the best Spanish chefs. The event took place in Xerta, where it is placed the farm. Those chefs were: Martín Berasategui (3 Michelin stars chef, from Guipuzcoa), Quique Dacosta (2 Michelin stars chef, from Denia), Oriol Balaguer (pastry chef, from Barcelona), and Alberto Cándido (chief of the restaurant Mesón Cándido, from Segovia). All of them attended the tasting and they find out the great values of the ecological olive oil and its importance in our nutrition. Absorbed by the ecological making process, Martín Berasategui nicknamed the oil as “liquid gold”. The evening was livened up by a distinguished environment among friends, and we all could notice the good connection between all.

2º Shoe Desing Award 2011

Dama de Elaia was represented in the 2nd Design Awards 2011

The ecological olive oil Dama de Elaia was one of the sponsors that supported the Fuenso International Shoes Design Awards, celebrated in Mallorca, from the 31st May to the 1st June 2011. The guests had time to go into the shoes world presented as an element of art, health, sensuality, and wellness.

They celebrated a tasting olive oil, supervised by D. Jose Alba Mendoza. During the tasting, they could appreciate all the olive oil benefits, and, also the ecological farming manufacture.

They presented three different categories and two special jury awards.

· Seduction ward, which went to Pura López.

· Energy award, which went to Geox.

· Care award, which went to El Natursita.

The special jury awards went to:

· The Finnish designer Minna Parike, as a young hope and enterprising in shoes world.

· Margit, the women’s footwear brand that offers Premium Quality and it is one of the Princess Letizia favorite’s shoes.

Among the jury, we could see Yolanda Sacristán, who works in Vogue Spain, Covagonda O’Shea (President of the ISEM, Fashion Business School), and Laurence Dacade (high quality shoes designer).
