Food Pairing

Food pairing of an extra virgin oil like the Dama de Elaia ones is not carried out according to the variety of olives that have been used to produce each one of them. One single variety of olives may have different expressions and nuances depending on the type of cultivation and the surroundings in which it has been developed. Such nuances are also influenced by the ripeness at the time of collection as well as other factors involved in its production.
Our single variety oils and also our coupage ones have been classified into the following groups in accordance with the degree of fruitiness, bitterness and pungency each one of them has, as the COI/08 table shows.


N.B.: Our descriptions are valid for the preparation of different dishes and also to be added when they are already prepared, for cooking and for the table. It should be noted that some cooks are discovering that the use of a particular olive oil, chosen according to its organoleptic properties, may enhance the result of the dish and improve its taste in a considerable way.
